VOLATILE ORGANIC COMPOUNDS AS MARKER OF AUTHENTICITY OF HONEYDEW HONEY
The possibility to determine the botanical and geographical origin of products such as honey has become more important because of market globalization. Honeydew honey is a specific type of honey, it derives from secretions of aphids and (in some cases) insects collected by bees, especially when natural sources and climatic conditions favour the harvest of honeydew over nectar. The aim of this study was isolation and identification of volatile organic compounds present in honeydew honeys using liquid-liquid extraction followed by comprehensive twodimensional gas chromatography coupled to mass spectrometry (GC×GC-MS). Representative honeydew honey samples of five different botanical origins (silver fir (Abies alba Mill.), evergreen oak (Quercus ilex L.), Hungarian oak (Quercus frainetto Ten.), Montpellier maple (Acer monspessulanum L.), conifers), from several part of coastal, mountain and continental area of Croatia were investigated. The identified compounds belonged to various chemical classes (hydrocarbons, alcohols, aldehydes, ketones, terpenes and benzene derivatives). GC× GC-MS combined with software for image processing and pattern recognition methods was applied for fingerprinting and classification of honeydew honey samples in order to evaluate the existence of data patterns and the possibility of classification of honeys from different botanical origins according to their presence of volatile organic compounds.
