Effect of nutrition on deoxynivalenol urinary excretion

Deoxynivalenol (DON) is one of the most commonly occurring trichothecenes, produced mainly by Fusarium graminearum. The study aimed to provide data on the levels of DON and DON-glucuronides in human urine samples collected from 49 volunteers aged 22-52 years and analysed by LC- MS/MS. The research was conducted for three consecutive days during which food consumption was recorded. For the first two days' volunteers were not allowed to consume food in which DON can be found. On the third day, they were given cereal products with known levels of DON and were instructed to collect 24-hour urine samples. DON and DON-15-glucuronide (DON-15- GlcA) were detected in all urine samples, while DON-3-GlcA was only detected in 16 % of the samples. An average concentration of DON-3-GlcA, DON-15-GlcA, and DON were 1.77, 39.7, and 5.08 ng/mL, respectively. The mean rates of DON excretion and glucuronidation were determined to be 53% and 84%. Statistical analysis of subgroups of omnivores and vegans matched by sex ratio, BMI, age and smoking status revealed a higher % of excreted DON and levels of urinary DON equivalents form DON-15-GlcA (µg/L) in vegans. Additionally, a number of food components associated with plant nutrition were correlated with increased DON excretion in urine. The results may indicate stimulation of DON urinary excretion pathways by phytochemicals.
